Serve with: salsa and Black Bean-Tomato Soup w/ Cilantro Cream
Serves 4
(okay, I know -- these quesadillas have peach in them -- but I couldn't find a better picture!)
1 c monterey jack cheese, shredded
jalapeno pepers
4 8" flour tortillas
1 c shredded cooked chicken
Make 2 flour tortilla 'sandwiches' layering: tortilla, 1/2 c cheese, peppers, 1/2 c chicken and another tortilla. Toast in a skillet on each side. Cut into quarters
