Roasted Pineapple

I large pineapple, peeled, cored and quarter
¼ cup butter, melted
2/3 cup packed brown sugar
Heat oven to 400 degrees. Line a baking pan/sheet with parchment paper or foil. Slice each pineapple quarter lengthwise into 4 thin strips and place on baking sheet. Drizzle with melted butter and sprinkle with brown sugar. Roast for 10 minutes. Turn over with tongs. Bake until juices are bubbling and pineapple is light gold, another 5 to 10 minutes. Set on wire rack to cool. Serve as strips or cut into chunks with vanilla ice cream.

Apple Crisp Dessert

INGREDIENTS:
0. 7 medium cooking apples, peeled, cored, sliced
0. 1 1/2 cups flour
0. 1 cup packed brown sugar
0. 1 tablespoon cinnamon
0. 1/2 teaspoon nutmeg
0. 1/4 teaspoon ginger
0. 3/4 cup butter or margarine, softened
0. .
0. Topping Suggestions:
0. Vanilla ice cream
0. Maraschino cherries
0. Whipped cream or whipped topping
PREPARATION:

Grease crockpot, arrange sliced apples in bottom of crock pot. In a mixing bowl, combine flour, sugar, spices and butter. Cover the apples with this mixture. Tap down lightly. Cook on HIGH for 3 to 4 hours, until apples are tender.

Serve in dessert dishes with any or all of the suggested toppings

Apple Betty

6 cups Thinly sliced apples
1 cup Granulated sugar
1 Tbsp All-purpose flour
1 tsp Cinnamon
Juice and zest of 1 lemon
½ cup Melted butter
3 cups soft bread crumbs
Directions:
In a large bowl combine apples, sugar, flour, cinnamon and lemon zest.
In another bowl, combine butter and bread crumbs.
In prepared slow cooker, layer one-third of bread crumb mixture, then one-half of apple mixture. Repeatlayers of bread crumbs and fruit, then finish with a final layer of bread crumbs on top. Cover and cook on High for 4 hours until bubbly and brown
