I served these with a salad made with romaine lettuce, baby spinach, tomato, romano and parmesan cheeses. I also made a balsamic dressing for the salad. It's recipe from Emeril Lagasse but I made some alterations.
1/2 cup balsamic vinegar
3/4 cup extra virgin olive oil
1 clove garlic, minced
3 tsp brown sugar
Couple dashes salt and black pepper

Cafe Rio Salad
Café Rio Salad
Build your salad using the following ingredients in the order given. You can use disposable pie or cake pans to make these salads.
1. Large Flour Tortillas
Use homemade or buy the uncooked ones and cook them on a griddle. Sprinkle some cheddar cheese on top and cook until the cheese is melted. Place the cheesy tortillas in a cake pan.
2. Spanish Rice or Cilantro Lime Rice Recipe below (or cook a packaged Spanish Rice Mix)
3. Black Beans
4. Meat of your choice
I like sliced grilled chicken, but you can also use shredded chicken (try Cafe Rio Chicken) or shredded pork (try Pork Balbacoa)
5. Romaine Lettuce
Wash thoroughly, and cut into large squares.
6. Pico de Gallo
7. Guacamole
8. Lime Wedges
9. Grated Cotija cheese
10. Cilantro sprigs
11. Crispy Tortilla Strips
Just cut some corn Tortillas in thin strips and quickly fry until crisp. Drain on paper towels and sprinkle with a little bit of salt.

Salad:

2 Kiwi fruit
2 avocados
1 small cup strawberries or raspberries
Sugared nuts (almonds, pecans, walnuts, etc)
Poppy seeds
Dressing:
2 ½ Tbs Raspberry vinegar
2 ½ Tbs Raspberry jam
1/3 cup olive or vegetable oil
Combine vinegar and jam in blender, mix and slowly add oil
Pour on salad – toss lightly and serve.
